FC reader Debra Schulz shares a recipe from her family's annual cookie-baking extravaganza.
Chocolate-Covered Raisin Oatmeal Cookies

Makes: 5 dozen cookies

1/2 cup butter
1/2 cup shortening
3/4 cup granulated sugar
3/4 cup packed light-brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cloves
1 teaspoon cinnamon
2 cups quick-cooking oats
1 heaping cup chocolate-covered raisins

  1. Preheat oven to 350 degrees F.
  2. In a large mixing bowl, cream together the first four ingredients. Beat in eggs and vanilla. In a separate bowl combine the flour, baking soda, baking powder, salt, and spices. Slowly add flour mixture to the batter. Stir in oats and chocolate-covered raisins.
  3. Drop by spoonfuls onto a lightly greased cookie sheet. Bake for 10 to 12 minutes at 350 degrees F. until set and lightly browned.
