Tasty Tuesday: Sour Cream Chicken Quiche

I love quiches.  And when I had my first bite of this one about a year ago, I knew it was a keeper.  It’s so, so good!  Cheesy and creamy, with just a hint of tanginess thanks to the nutmeg and sour cream, it’s a real winner with the whole family!

For a real treat, instead of using a pre-made bought crust, make this quiche with my Easy Homemade Pie Crust.

Sour Cream Chicken Quiche

Ingredients
  • 1 (10 in.) pie crust, unbaked*
  • 1 tbsp. olive oil
  • ¼ c. chopped onion
  • ¼ c. chopped bell peppers (optional)
  • 1 c. chicken, cooked and shredded
  • ¼ tsp. salt (I add a tiny bit more)
  • ⅛ tsp. nutmeg
  • ¼ tsp. black pepper
  • ¾ c. shredded cheddar cheese
  • 3 eggs, slightly beaten
  • ¾ c. milk
  • ¾ c. sour cream

Instructions
  1. Preheat oven to 400°.
  2. In medium frying pan, heat oil on medium-high; add onion and green pepper. Saute until soft, stirring frequently. Remove from heat.
  3. Stir in chicken, salt, nutmeg and pepper. Spread over bottom of unbaked pie shell and top with shredded cheese.
  4. Combine eggs, milk and sour cream; mix until smooth. Pour over chicken mixture.
  5. Bake for 20 minutes. Reduce temperature to 350º and bake 20 to 30 minutes until inserted knife comes out clean.

Notes
* If using 9 in. crust, reduce egg to 2 or just put whatever filling doesn’t fit into our pie crust into a separate small dish and bake that way.

Household Tip: Reheat Pancakes in Toaster

My children love pancakes and this simple tip has been so helpful.  I especially love it for those days when I’m super busy and suddenly realize it’s lunch time.  Just as I’m hitting panic mode and wondering what to feed my hungry crew, I’ll suddenly remember that I have pancakes in the freezer.  So I’ll whip them out and within a few minutes I can have warm, homemade lunch on the table ready to fill my hungry kids belly’s.  Kind of makes me feel like supermom or something!  And who doesn’t like to feel that?

Tip:
Make breakfast (or lunch!) a cinch by using your toaster to reheat leftover or frozen pancakes.  It’s as simple as popping them into the toaster and toasting them until they are warm and the sides are slightly crispy.  And that fast you have delicious hot pancakes to enjoy!

You can do this with leftover pancakes that you’ve kept refrigerated or with pancakes that you’ve frozen.  Either one works.  If you are making pancakes up to freeze and enjoy later I recommend storing them with a piece of wax paper between each pancake so that they don’t stick together.  Or, if you’d rather, you can flash freeze them first by laying them out on a cookie sheet in a single layer, putting them in the freezer until frozen solid and then put them in a Ziploc bag or container.  If you do it this way, you don’t need to put anything between the pancakes.

Why I recommend it:
1.  It’s frugal.  Making your own pancakes, freezing them and then reheating them in the toaster is much less expensive than buying frozen pancakes at the store.  Plus, if you can create a quick breakfast (or lunch) at home, you’ll be much less tempted to stop at McDonald’s to eat which will save you a lot!

2.  They taste good.  Toasting them gives them a nice crispy outside and doesn’t leave them soft and mushy like pancakes reheated in the microwave.

3.  It’s fast.  There’s no excuse not to have a filling, warm breakfast when you can get it ready in a minute or two.

4.  It creates less waste.  Instead of letting extra pancake batter spoil in the fridge thinking that one of these mornings you’ll use it, you can go ahead and make pancakes with it and then just enjoy them later on in the week.

5.  It saves time.  If you are going to be making pancakes already, why not take a little bit of extra time and double your batch and then have some for a quick meal later?  The bonus is that you’ll only have to do the work of mixing them up and washing those dishes once!

Tasty Tuesday: Simple Strawberry Pie (easy & delicious!)

When I was growing up, our family always eagerly awaited strawberry season because that meant we’d have lots of strawberry shortcake…. and this delicious strawberry pie!  We all thought Mom made the best strawberry pie and the sight of it on the dinner table was met with lots of excited comments!  And while I know there are lots of more elaborate strawberry pie recipes, you know, with cream cheese and the like, I still think her recipe is the best.  This is one of those times when simpler truly is better!

Use my Easy Homemade Pie Crust recipe for the crust and with the combo, you’ll be in for a real treat!

Strawberry Pie

Ingredients
  • ¾ c. sugar
  • 3 Tbsp. cornstarch
  • 1½ c. water
  • 1 small box (3 oz.) strawberry jello
  • 3 to 4 c. sliced strawberries
  • Cool Whip or real whipped cream
  • 10″ pie crust, baked

Instructions
  1. Combine sugar, cornstarch and water; cook over medium heat until thickened, stirring often. (I like to use a whisk for this.)
  2. Remove from heat and add jello; stir until dissolved.
  3. Allow to cool, then gently mix in strawberries. (If you are in a hurry, you can skip this step. The berries just stay nicer if it’s cooled.)
  4. Pour into baked crust and refrigerate. Once filling is set, top with Cool Whip or real whipped cream.
  5. Enjoy!

Sonic: Half Price Shakes after 8 pm (all summer long!)

Sonic just announced that they will be offering half priced shakes after 8 pm. every day, all summer long! (Through Sept. 1, 2014.)

Sounds like a delicious deal to me!  I think we’ll try to take advantage of it as a fun treat for one of our family nights.
