Tasty Tuesday: Orange Cottage Cheese Salad

I recently had some cottage cheese that needed to be used up and it made me remember this yummy salad.  It’s perfect for summer weather- light, cool, refreshing.   Plus it whips up in about 5 minutes- you can’t complain about that!

When people eat this they are often surprised to find out that it has cottage cheese in it.  And even folks like me, who aren’t big fans of cottage cheese, still enjoy it.  Oh and you might like to know that it’s typically a hit with children too.

Orange Cottage Cheese Salad
3 oz. orange jello
16 oz. cottage cheese
11 oz. can mandarin oranges, drained*
2 cups Cool Whip (or whip up some real whipped cream like I do!)

Mix jello with cottage cheese and oranges.  Fold in Cool Whip/real whipped cream.  Enjoy!

*Crushed pineapple or other fruit can be used instead…you could even change up the jello flavors.
