Tasty Tuesday: Homemade Salad Dressing (or Mexican Dressing)
If you read my menu plans, you’ll notice that I often mention having homemade salad dressing. This is our favorite and the one we use the most. It is slightly sweet, a bit creamy and just has a nice, full flavor. Although I changed it a little, the recipe came from a local church cookbook and was listed with a salad recipe so the dressing itself didn’t actually have a name. But I’ve tasted something called Mexican Dressing that tasted pretty much identical to this so I’m assuming that is what this should be called.
Mexican Salad Dressing
1 med. onion
2/3 c. sugar
1 tsp. salt
1/2 tsp. pepper
1 tsp. celery seed
1 Tbsp. prepared mustard
1/3 c. vinegar
1 c. oil
6 Tbsp. mayonnaise (opt.)*
Put all ingredients but mayonnaise in blender. Mix 2-5 min, so oil doesn’t separate. Add mayonnaise and blend until mixed.
*This is obviously healthier without the mayonnaise but it is also much creamier with it. We like it both ways but do prefer it with the mayo added.

How long does this last for? Have you tried it without the onion? Do you use it for basic lettuce salads?

This looks like the salad dressing recipe we use most, too! I think mine came from an old cookbook that had recipes from Central Market in it. It even works with coleslaw. It’s very yummy.

Megan, sorry about the slow reply. For some reason my gmail account keeps sending comments to spam and so I miss them.
I’ve had it in the fridge for at least a month, but I would think you could probably even have it longer since the ingredients are pretty long lasting if you know what I mean. I haven’t totally skipped the onion but I have made it using onion powder in the past, although it isn’t as good. It does have a fairly strong onion flavor but even though I’m not a huge onion fan I don’t mind it. You could always make it and cut back on the onion and see what you think.
Yes, I use it for basic lettuce salads. It goes well with lots of different salad combos. We often use it on salads that have eggs or almonds/cashews but it goes really well with any basic salad. Hope that helps!
Monica, the coleslaw idea intrigues me! I don’t really like coleslaw but I just might if I used this!

Can u substitute honey for the sugar?

Rhonda- I would imagine so but I don’t use honey that much so I can say for sure. Honey would def. give it a different flavor and I don’t know if you’d use the same amount or not. If you try it, I’d love if you’d let me know how it worked out!
