Tasty Tuesday: Creamy Cauliflower Cheese Soup
Some friends recently gave us a gigantic head of cauliflower which was really nice since the cauliflower plants that I had planted have done nothing other than get huge leaves and lots of worms. I’ve been wanting to try cauliflower in a soup and so last night I created this savory Creamy Cauliflower Cheese Soup. I found several cauliflower soup recipes but none of them quite suited me so I combined several and added a few of my own ideas and we absolutely loved the outcome. And I always know I do well if my husband, who is not a huge cauliflower fan, declares it to be “really good.” Try it yourself and let me know what you think.
Creamy Cauliflower Cheese Soup
3 c. cauliflower, cut into small florets
1 can (or 2 cups) chicken broth
1 chicken bouillon cube
1 small onion, minced
2 Tbsp. butter
2 Tbsp. flour
2 c. milk
1 1/2 c. shredded cheddar cheese
1/2-1 tsp. salt
1 Tbsp. parsley
1/4 tsp. nutmeg
1/8 tsp. black pepper
1/4 tsp. red pepper
In large saucepan combine cauliflower, chicken broth, bouillon and onion. Cover and cook over medium heat until the vegetables are tender. Meanwhile, in a small saucepan melt butter; stir in flour until smooth. Slowly add milk; cook and stir until slightly thickened. Remove from heat, add cheese and seasonings. Pour into cauliflower mixture. Reheat until good and hot. Enjoy!
Yields: 4-5 servings
