Tasty Tuesday: Homemade Shake and Bake

If you are looking for an inexpensive, healthy and delicious alternative to bought Shake and Bake try this homemade version.  We really like it and it couldn’t be easier to mix up.

Homemade Shake and Bake
1 c. Fine Bread Crumbs
1/2 c. flour
1 tsp. cornstarch
1/4 tsp. salt
1 tsp. sugar
1 tsp. paprika
1 3/4 tsp. onion powder
1 3/4 tsp. garlic powder
1 1/4 tsp. poultry seasoning*
1/2 tsp. season salt
1/4 tsp. pepper

Combine ingredients; mix well.   Rub cut-up chicken with oil or melted butter, then roll in crumbs.  Bake covered at 400 degrees for 30 minutes, then uncovered for 30 minutes or until done.

This makes enough for 1 whole chicken (cut up) or 8 whole legs (thighs and legs).  If using a smaller amount of chicken, just pour a small amount of Homemade Shake and Bake into a bowl and put the rest in a sealed container for another time.  It keeps for as long as the bread crumbs do.

* Once when we didn’t have any poultry seasoning on hand I just upped the season salt and that was really good too.
