Tasty Tuesday: Blueberry Buckle
This blueberry dessert is one that I try to make at least once every summer when we have fresh blueberries and I make it throughout the winter with frozen ones sometimes too. Blueberry Buckle is a dense cake bursting with lots of blueberry flavor and topped with a crunchy, sweet streusel like topping. With all those blueberries, there is not a chance of it being dry and while it’s definitely good enough to eat alone, it’s even better with a little vanilla ice-cream!
Blueberry Buckle
3/4 c. white sugar
1/4 c. butter, softened
1 egg
1/2 c. milk
1 2/3 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 c. fresh blueberries (can use frozen too!)
Cream together sugar, butter and egg. In a separate bowl mix together flour, baking powder and salt. Stir into sugar mixture, alternating with milk. Stir in blueberries. Pour into a greased 8×9 baking dish.
Topping:
1/2 c. brown sugar
1/3 c. flour
1/2 tsp. cinnamon
1/4 c. butter, softened
Combine, using a fork, and sprinkle over cake batter. Bake at 375 degrees for 35-40 min. or until done.
