Tasty Tuesday: Crustless Bacon and Egg Quiche (using homemade Bisquick)

I’ve been making this fast, simple dish since soon after we were married five years ago. In fact, when I’m in the mood for a quiche, I rarely use any other recipe. One thing that I really like about it is the fact that you don’t need to make a crust, because by using the Bisquick, you automatically “get” a crust.  And if you are trying to cut your meat costs, this is a great dish to serve too!

Crustless Bacon and Egg Quiche

1 1/2 c. milk
1/2 c. Bisquick mix (I use my homemade version)
4 eggs
2 Tbsp. butter, melted
dash pepper
1 c. shredded cheese
cooked bacon, crumbled (about 5 – 6 slices)**
In a blender, combine milk, Bisquick, eggs, butter and pepper. Blend for 15 seconds. Pour into a greased 10 inch pie plate or 9×9 baking dish. Sprinkle cheese and desired amount of bacon on top. Gently press below surface with a fork. Bake at 350 degrees for 30 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.
** I’ve made this with sausage before too, and it was just as tasty!
