Tasty Tuesday: Mexican Chicken Roll-ups

We love these Mexican Chicken Roll-ups.  I always try to keep cooked chicken in the freezer (or I can it which is even handier), so this is really fast for me to throw together for dinner..  And it’s just a yummy, creamy, cheesy, seasoned dish.  I’ll warn you though, it’s really filling so if you don’t like leftovers I would recommend only making half a recipe.

UPDATE: Be sure to read Michelle’s comment below.  I love her idea of how to make this dish even less expensive and stretch it further!

Mexican Chicken Roll-ups

2 1/2 c. cooked chicken, diced
1/2 c. sour cream
1 1/2 tsp. taco seasoning
1/2 can cream of mushroom soup*
1 c. shredded cheddar cheese
1 small onion, optional
1/2 c. salsa
10 7″ flour tortillas

Topping:
1 c. sour cream
1/2 can cream of mushroom soup*
1 1/2 tsp. taco seasoning
1/2 c. cheese

Combine ingredients and place 1/3 cup filling in each tortilla.  Roll up and place seam side down in a 9×13 pan.  Mix topping ingredients (minus the cheese) and pour over tortillas.  Bake at 350 degrees for 20 minutes.  Sprinkle with 1/2 cup cheese and bake an additional 10 min.

* I use my homemade cream soup for this.

    I have a recipe identical to this one and we love it. I started putting rice and black beans in it also. It’s a good way to stretch your filling so you can make even more roll-ups. When I make these I usually make a big batch and stick some in the freezer for later.

    I also wanted to tell you that I made yogurt!!! We love it! I’m not really a huge yogurt fan but like it if I can eat granola with it.

    Michelle, I LOVE your idea of adding rice and beans to this. It would really stretch it further and I can imagine it tastes great too! And thanks for clarifying that they freeze well. I had thought of trying it and now I know.

    As for the yogurt- go you! I wasn’t always a yogurt fan either but I do love homemade. And I found the more I ate it the more I liked it. Anymore I try to eat some every day. I read recently that a serving a day helps with weight loss and I can sure use that!

    Looks yummy, we love chicken dishes. I’m going to be canning chicken for the first time in seveal weeks.Thankfully I’m getting together with friends to can it as I don’t know anything about canning meat.

    Coupon Cutting Mom good for you for canning chicken. I’ve actually never done- have some that a friend did for me and it is SO handy. Did you know that you can can it in your oven? I have friends that do it and my mother-in-law did it too. Seems much easier to me and I’m going to try it when I need more chicken.
