Tasty Tuesday: Homemade Grapenuts

I mentioned my homemade grapenuts in a post a couple of weeks ago and a reader requested that I share it.

This healthy cereal is so good…in fact so much so that I often eat it as a snack. It’s crunchy, slightly sweet and also is perfect mixed with homemade granola for a little added crunch. And I find that 1/2 cup easily keeps me full until lunchtime…unlike bought cereal.  This recipe does make a large amount of grapenuts, but they freeze wonderfully, so no worries!  Or you could easily half the recipe too.
I should mention that homemade grapenuts taste very little like bought grapenuts.  I don’t like bought grapenuts because I think they are pretty flavorless, but these homemade grapenuts are very different.  They are slightly sweet and just have a really yummy kind of nutty flavor.

Homemade Grape-nuts Cereal

2 1/4 lbs. brown sugar (approx. 6 cups, packed)
3 1/2 lbs. whole wheat flour (approx. 11 2/3 cups)
3/4 cup oil
3 cups sour cream (I use yogurt)
1 tbsp. vanilla
1 tbsp. salt
1 tbsp. baking soda
2 cups buttermilk*

Mix together all ingredients except buttermilk. Mix well, then gradually stir in the buttermilk. Divide dough onto 3 greased cookie sheets and bake at 350 degrees for 30 minutes. When cool, crumble in blender** and then dry in warm oven (200 to 225 degrees), stirring occasionally- this usually takes several hours. When dry, the grapenuts will be crunchy.

* Make your own by mixing 1 Tablespoon white vinegar or lemon juice to 1 cup of milk.  Let sit for 5 minutes and use as you would buttermilk in baking.

** When the pans are somewhat cool I cut the “cookies” up into pieces and turn them over allowing the cookie to cool faster. Once cool, I blend a few pieces at a time…if you do too many pieces, it won’t blend very easily.

    Vanessa, you are very welcome!

    Sarah, I’m not totally sure but I do know that one batch makes enough to fill one 5 qt. ice-cream bucket plus some if I remember correctly. The last couple of times I made them I had some left from previous times when I made them so I just added them to that container and therefore can’t remember the exact quantity it made.

    Rebecca, Either works. I typically store a couple of weeks worth in the pantry and then the rest in the freezer and then just get them out as needed.
