I rarely come across a cookie that I don't love, but when I saw these adorable cookies from Casue, I realized I had found my new faves. The company—a family operation that was founded by identical twins—specializes in custom-designed cookies for any occasion. Need something extra special for a Christening or Communion? They do that. Want a unique snack for when you host your son or daughter's t-ball team? They do that, too. Or maybe you need something for dad or grandpa. Whatever the reason for celebrating, Casue has a cookie for it.
If all of that wasn't reason enough to check out the company, you can send them your own personal photo of something meaningful to you — say your wedding dress or the actual dress your daughter wore to her Christening — and they can make a cookie out of that, too.

In my continuing effort to get/stay in shape and eat well, dinner is always the biggest challenge. It’s just hard to keep coming up with meals that taste good without being too fattening (and can be made in a half-hour after I get home from work). One of my reliable favorites is something I once whipped up on a whim and happened to please everyone in my family. I’m not sure exactly how much it makes. I always freeze at least half of it and save it for another week.
Mexican Chicken
Ingredients:
2 pounds of chicken breasts cut up (I buy it already cut for stir-fry)
2 jars salsa
1 can black beans (rinsed)
1 can corn
1-2 tablespoons fat-free sour cream
A handful of low-fat shredded cheddar cheese
•Cook the chicken in a big skillet.
•Pour off the extra fat.
•Add the salsa and cook for a few minutes.
•Add beans and corn.
•Add sour cream
•Add cheese, cover and stir until bubbly.
We like to eat it sort of wrapped in a warmed-up tortilla. It takes barely 15 minutes total.
