Quick chicken parmesan. Cut chicken breast into tender size strips, dip in milk then a mix of italian style bread crumbs and parmesan cheese, cook on stove top over medium heat in a little bit of olive oil or butter until cooked through, pour jar spaghetti sauce over, sprinkle a little mozarella over each piece of chicken, cover and heat for a few minutes until sauce and cheese are bubbly, serve over spaghetti. Takes about 20 minutes, no plan ahead prep, and my kids love it. It’s like they’re getting spaghetti and chicken tenders, two of their favorites!

We don’t have any quick fix, that’s why we need this book! DH cooks everything in our house from scratch since 6mo. old, and his tastebuds are more refined than many adults! He’s 15 mo. old and had fried green beans & calamari when we went out to dinner, he also loves curried pumpkin & risotto! The only thing ever ready to go is his yogurt, so I guess that’s our quick fix!
