Get Your Grilled Cheese On

Not that anyone needs another reason to eat a delicious grilled cheese sandwich, but did you know that April is actually National Grilled Cheese month?

Me either. But I’m sure glad it is! Tonight, when I get home, I might try this tasty twist on the classic, courtesy of cooking blog Pithy and Cleaver: a tomato soup grilled cheese sandwich, where the soup is actually in the sandwich. Genius! All you need is some sundried tomato paste, some cream cheese and a bit of regular tomato paste to whip up the tomato soup part of this treat. Serve it on the sly to the kids and they won’t even know they’re getting the benefits of tomatoes in a sinfully scrumptious grilled cheese.
