Never-Fail Dinners

In my continuing effort to get/stay in shape and eat well, dinner is always the biggest challenge. It’s just hard to keep coming up with meals that taste good without being too fattening (and can be made in a half-hour after I get home from work). One of my reliable favorites is something I once whipped up on a whim and happened to please everyone in my family. I’m not sure exactly how much it makes. I always freeze at least half of it and save it for another week.

Mexican Chicken

Ingredients:
2 pounds of chicken breasts cut up (I buy it already cut for stir-fry)
2 jars salsa
1 can black beans (rinsed)
1 can corn
1-2 tablespoons fat-free sour cream
A handful of low-fat shredded cheddar cheese

•Cook the chicken in a big skillet.
•Pour off the extra fat.
•Add the salsa and cook for a few minutes.
•Add beans and corn.
•Add sour cream
•Add cheese, cover and stir until bubbly.

We like to eat it sort of wrapped in a warmed-up tortilla. It takes barely 15 minutes total.

    Even easier is to throw the whole chicken breasts in the crockpot, cover with a large jar or two of salsa and let it go on low for 6 hours. Shred chicken lightly and stir. Add the beans and the corn (and more salsa if you need it). Same great taste, with toppings and all, just let the crockpot do all the work!
